Steamed whole wheat idli is made of broken wheat, a very healthy dish especially when one is sick and needs strength and energy. A diabetic recipe since it is low fat and less calories. You can make it for breakfast on a weekend or dinner. 🙂
Godhuma Rava Idli – Steamed Whole Wheat Idlis
Dry roast Â¼ kg (250 gms) of broken wheat till it turns red. Add salt, 1 cup of curd and enough water to the roasted wheat till you get a paste like batter. Let is sit for half an hour. Add 1/2 tbsp of grated ginger, 1 tbsp of chopped green chillis, 1 1/2 tbsps of chopped coriander leaves, 3 tbsps of grated carrot and 1-2 tbsp of grated fresh coconut (optional). Heat 1 tsp olive oil in a pan and add Â¼ tsp mustard seeds and let them splutter and add 10-12 curry leaves, fry for few seconds. Remove from fire. Add this to the wheat-curd batter. Combine well and spread ladle full on idli trays and steam for 15 minutes. Alternately you can steam in a dish and cut into square pieces and serve.
You can have this with any chutney, groundnut, coconut or coriander chutney.
