Apple Cinnamon Muffins

I hope you had a great holiday season and wonderful start into the New Year. Am starting the new year on a sweet note. Baked a batch of Apple cinnamon muffins that have stolen the hearts of my family members. The aroma of cinnamon and the flavor of apple and chocolate chips make the muffins a special, tasty, homemade treat.

Mocha Chocolate Chip Muffins

Lately, I’ve been bitten by the baking bug. Yes, its the Christmas season and will be on a baking spree over the next few days baking cookies, muffins and cakes. Yesterday, I baked a batch of Mocha Chocolate Chip Muffins which I bookmarked from Divya’s blog who in turn found it at Baking Bites.

Pineapple Upside Down Cake

Nehal is enjoying his Dasara break with his friends. School break means more work for me in the kitchen. I don’t mind it at all, in fact, enjoy it. 🙂 Yesterday, I baked a charming, delicious sweet treat for Nehal and his friends. Pineapple Upside Down Cake! Though it sounds and looks fancy, its a breeze to make.

Quick Boiled Egg Fry

Quick boiled egg stir fry that is slightly similar to the simple egg roast I blogged a while ago. An amalgamation of North and South Indian style of culinary preparation. Aromatic curry leaves and spices, kasuri methi, fresh coriander leaves and caramelized onions give the quartered boiled eggs an addictive taste. Serve as an appetizer or a dry saute with rice or rotis.

Breakfast Chicken Sausage Platter

Our brunch this morning was roasted chicken sausages flavored with oregano, sauteed shredded cabbage, boiled egg, cucumber and lightly sauteed apple slices. This breakfast platter is adapted from Nita Mehta’s breakfast cookbook and made for a super quick, flavorful, filling, men-pleasing (my son and husband) 🙂 meal. For a lunch or dinner version, you can […]

Egg Kurma

An inviting egg curry that is loved by all at home. There are numerous versions of egg korma floating round the internet. But today’s recipe is bookmark-worthy. The combination of heady spices and coconut sauteed along with the onion-tomato base gives the egg kurma its unique flavor that is hearty and comforting. Makes a great side with biryani or flavored rice.

Egg Biryani

Comfort food, Egg biryani, makes for a perfect weekend meal with raita and curry. Yesterday, I was inspired to make a flavored rice and since our family loves eggs, I decided on Egg biryani which has a striking resemblance to Hyderabadi Chicken Dum Biryani. Its easy to put together, substantial and full of flavor.

Egg Masala Curry

I do not follow any standard (masala) recipe while preparing an egg curry. Each time I venture to prepare an egg curry, to serve as a side with rice or pulao, I tend to tweak an old favorite and experiment with spices. A friend visited us recently and I had prepared this egg masala which came out a winner.

Anda Methi ~ Egg curry with Fenugreek leaves

An egg curry with hints of methi and a mild masala flavor. I have kept the recipe light, restraining the use of malai aka cream which yields a creamy rich dish. Play around with spices of your choice. Makes for a quick and flavorful side with rice or rotis.

Kodi Guddu Beerakaaya Kura – Egg – Ridgegourd Curry

Boiled eggs are cooked in combination with vegetables like ridgegourd, drumsticks, potatoes, tomatoes and minced meat (kheema) and fresh prawns in our parts. One delectable combination is the pairing of ridge gourd with boiled eggs, a delicious Andhra style curry. Today’s milk based gravy dish, with very few ingredients, transforms a simple egg curry into […]
