Bangaladumpa Beans Vepudu ~ Potato French Beans Stir Fry

I like french beans when cooked with potatoes. Today’s stir fry recipe is about ordinary ingredients with clean simple flavors. Easy, healthy and makes for a comforting side with sambar and rice. It also goes well with rotis.

Am not a great fan of the bean family. And that actually affects my enthusiasm to cook them. But this recipe, I shall try and am sure it would just taste perfect like your other recipes :)

I like making beans with potato too. There is always coconut in Tamil cuisine for some fry like this. I would love to make them without the coconut like this recipe.

How can u make stuff with just 1/2 spoon Oil and still get the beans and potato separate? Your dish looks so healthy and non sticky.
I cook french beans and potato combination but its mushy if i use just 1/2 spoon oil.
    Any trick behind this?
I do not know if its because of the Indian (Mukudu) pan you are using, but even Raw banana fry with the ones we get here are very mushy and takes a lot of effort (and oil) for them to be golden fried.

Definitely the potato does stick to the mukudu/cooking vessel, but you need to scrap it and combine during the cooking process. And adding salt at the beginning itself, will help cook the potato faster. Heat control as well the type of potatoes used also makes a difference. When you par boil the beans, the stir fry doesn’t need much oil. Otherwise most stir fries do need a wee bit more oil. Regarding raw banana stir fry, definitely it requires a lot of oil. :)

    Hi Sailu,
This recipe is new to me. I’ve never used potatoes and beans together in a curry before. With onions and beans, I add milk and make a curry, but other than that it’s usually with coconut or dal. thanks for sharing :-)
