Simple Mutton Curry ~ Indian Style Lamb Curry
This is a very simple and easy mutton curry that I often make. An Andhra style mutton curry with great flavor.
Marinate 1 kg mutton (lamb) in 3/4 cup curd, 1 tbsp ginger garlic paste, 2 tsps coriander pwd, 1/4 tsp garam masala pwd, 1/4 tsp turmeric pwd, 1 tsp red chilli pwd, 1/2 tsp jeera pwd (cumin pwd) and salt for half an hour.
Heat 3 tbsp of oil in a cooking vessel and add whole garam masala [3 green cardamoms, 6 cloves, 1" dalchini] and saute for few secs. Add a cup of sliced onions and 3 slit green chillis and saute till the onions turn transparent. Add the mutton along with the marinade and mix well. Let the mutton cook in its own water on medium heat till oil separates.
Add 2 cups of water, cover and cook the mutton till soft on slow fire.
Add a pinch of nutmeg pwd (jaaji kaaya podi) before you turn off the heat. Garnish with chopped coriander leaves and your mutton curry is ready to be served with hot rice or rotis.

The curry was heavenly. Usually after coming from work, I go for snacks.. Today, the first thing I did was to turn on rice cooker to finish off the yesterday’s!!

This curry came out excellent! It was so easy to make… and it was my first time buying lamb, handling it (i.e., cleaning and cutting) and cooking it– so i was nervous. but all in all, it was delicious. Thanks Sailu Akka!

My husband and I love Indian food and I’ve been surfing the Net for a good mutton curry and stumbled upon your contribution. I first had to buy all the ingredients before making it last night. Well, we just loved it! The heat certainly gave the old sinuses a good work out so I’ll need to cut down on the chilli next time(!) but the flavours were absolutely divine. I live in ‘country Australia’ and caused a bit of amusement at the city Health Food shop when I asked for a 1″ piece of cinnamon stick – the smallest amount they’d ever sold! This curry is certainly going to be added to my ‘Special Recipes’ repertoire. Sincere thanks to you Sailu: I believe I’ve hit the mutton curry jackpot!

hey sailu do i need to cook it in a pressure cooker???
Have just returned to England from my first trip to India where I stayed with family in Visakhapatnam. Am really looking forward to trying out some of your recipes but am not sure of some of the ingredients and whether we can obtain them in the UK. Also, where your recipes stipulate using a cup for measuring, can you advise me what this is equivalent to (grams/litres/ounces). Many thanks. Hi Sailu, could you tell me how do you get your lamb or chicken to be soft and tender, any time I try I can never get it the way you get it in the restaurants, my dish may be nice and tasty but I feel it could be a bit more tender. thanks Robert.

I have been doing this recipe almost as exactly as descrbed for the past sixty years or so. There is a very slight deviation. I finely slice three large onions on a Japanese mandolin so that its even. I fry the onions brown and drain in a sieve. Using the same oil I fry the meat and masalas and then spread the fried onions on top. I then add one glass of boiling water and cook on a slow fire. A squeeze of lime just before taking the curry off the fire.
Robert: I mix the lamb with one tablespoon of ground papaya, one cup of curd and all the masalas and keep the stuff in the fridge overnight. I got this recipe from an Anglo Indian gent from the UP on my first visit to India sixty years ago.

I fry chopped onion,garlic and tomatoes in sesame oil or ghee in a pressure cooker,then add chopped chilli and stir until golden. Then I add the mutton
previously marinated with turmeric,salt, black pepper and meat masala for
30 minutes and stir until meat starts to melt the fat and makes a nice thick gravy. Then I add some cardamom,cinnamon and cloves, put boiling water to pressure for 30 minutes . I live in the Philippines where all the
ingredients are often not available but this recipe works . I remember it
from the days when I was young in Allahabad.
